The city is also associated with stroopwafels, the thin caramel-filled waffle cookies that originated in Gouda and remain a familiar local specialty. Traditional candle making is another part of the city’s heritage, commemorated by the Gouda by Candlelight event, when the Markt becomes a setting for illuminated festivities.
